California Quesadilla

Quick and healthy quesadillas
Ingredients:
  • 2 large flour tortillas
  • 1/4 cup shredded cheddar cheese
  • 1 ripe avocado, chopped
  • 1/2 ounce Sliced ripe olives
  • 2 Jalapeno peppers sliced, if desired
  • 1/2 cup Pilgrim's Pride cooked, diced chicken breast

Directions:
Spray one side of each tortilla lightly with vegetable oil spray. Sprinkle cheese evenly on one tortilla on the uncoated side. Add other ingredients, spreading evenly over cheese. Top with second tortilla. Place quesadilla in nonstick skillet that has been sprayed with vegetable oil and heated. Cook 1 to 2 minutes per side, or until cheese melts. Cut into wedges. Serve topped with salsa or sour cream, if desired.
