King Ranch Chicken


Ingredients:
  • 4 cup, chopped or diced (4.9 oz) Chicken, Breast, meat only, roasted
  • 2 tablespoon (0.5 oz) Margarine, salted
  • 1 medium, bell pepper, chopped
  • 1 medium onion, chopped
  • 10 oz Canned, Rotel Tomatoe w. green chilies
  • 1 can (10.8 oz) Condensed Cream of mushroom Soup
  • 1 can (10.8 oz) Condensed Cream of chicken soup
  • 12 each, 6" diameter corn tortillas, Cutin into quarters
  • 2 cup, shredded (4 oz) Cheese, Cheddar

Directions:
Melt butter in a large skillet over medium heat; add bell pepper and onion, and sauté until crisp-tender. Remove from heat, and stir in chicken, tomatoes, green chilies, and soups.

Place one-third of tortilla quarters in bottom of a lightly greased 13 x 9 inch baking dish; top with one-third chicken mixture, and sprinkle evenly with 2/3 cup cheese. Repeat layers twice, reserving last 2/3 cup cheese.

Bake at 325° for 35 minutes; sprinkle with reserved cheddar cheese, and bake 5 minutes more. Let stand 5 minutes before serving.

Yield: 6 - 8 servings

Prep: 35 minutes Bake: 40 minutes Stand: 5 minutes

* 4 boneless, skinless chicken breasts may be used. Sprinkle with salt and pepper; place in a lightly greased baking dish. Bake at 350° for 20 minutes or until done. Cool and coarsely chop.
