Spicy Key Lime Chicken with Corn Relish and Cheddar Wraps


Pilgrim's Pride

Ingredients:
  • 1 package Pilgrim’s Pride Eat Well Stay Healthy Key Lime Flavored Chicken Breast Fillets
     Corn Relish:
  • 4 ears of fresh corn, shucked and remove the silk (or canned whole corn)
  • 1 tablespoon olive oil
  • 4 tablespoons red onion, chopped
  • 1 jar yellow and red roasted Pepper (7.25 ounce)
  • 4 tomatillos, remove husk, rinse and dice
  • 2 teaspoons apple cider vinegar
  • 1/2 cup cilantro leaves (garnish)
  • 1 teaspoon sugar
  • 1/2 lemon, juiced
     Jalapeno Cheddar Wraps:
  • 1 pkg Mission Jalapeno Cheddar Wraps

Directions:
Heat chicken per package instructions.

Corn Relish

Cut corn off the cob so kernels remain whole and set aside.
Heat olive oil in heavy skillet over medium heat and add corn. Sauté for 5 minutes stirring often.
Add red onion, bell peppers, tomatillo, vinegar, lemon juice and salt and pepper to taste and set aside.

Jalapeno Cheddar Wraps

Cut into triangles and heat until lightly brown in skillet with vegetable oil.

Place a portion of the corn mix on serving plate surrounded by four Jalapeno Cheddar triangles. Place one chicken breast on top and garnish with cilantro leaves.
