Lagoon Wild Rice Chicken Salad


Ingredients:
  • 4 cups (24 oz) diced Pilgrim's Pride chicken breast meat
  • 1 package Uncle Ben's wild rice mix, prepared according to package
  • 1 cup chopped unpeeled apple
  • 1/2 cup chopped celery
  • 3/4 cup slivered almonds, divided
  • 1 small can (8 oz) chopped water chestnuts
  • 1 cup seedless green grapes, halved
     Dressing:
  • 1 cup mayonnaise
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon cinnamon

Directions:
Toss together chicken, cooked wild rice mix, apple, celery, grapes, water chestnuts and 1/2 cup of the slivered almonds.

Add dressing and toss lightly. Cover and chill about 30 minutes to blend flavor. To serve, line a glass bowl with leaf lettuce or spinach leaves. Spoon chicken mixture into bowl and sprinkle with remaining 1/4 cup of slivered almonds. Serves 6 - 8
